Why “Pakal”? Behind the restaurant's name stands K'inich Janaab' Pakal, ruler of the Maya city of Palenque — a discreet nod, never folkloric, to a world of travel.
To choose a name is already to tell a story. “Pakal” is neither an invented word nor a simple exotic wink: it is the name of a great Maya ruler, borrowed with restraint to express the openness to the world that runs through all of our travel cuisine.
Who was Pakal?
K'inich Janaab' Pakal — known as Pakal the Great — ruled the Maya city of Palenque, in what is now Chiapas, southern Mexico. Crowned as a child, he held power for nearly sixty-eight years, one of the longest reigns known for the Classic period.
Under his authority Palenque reached its golden age: palaces, temples and bas-reliefs are today among the masterpieces of Maya art. His tomb, uncovered in 1952 beneath the Temple of the Inscriptions, revealed a carved slab that became one of the most famous images of this civilisation.
