At Pakal, world cuisine isn't a collection of clichés but a thread: we borrow a spice from Asia, a gesture from the Mediterranean, a generosity from South America, and we let them talk to the best of what Provence has to offer. The journey happens at the table, without a passport.
The result stays readable and honest: a recognisable product, a precise cooking, a seasoning that wakes up without masking. We look for the emotion of somewhere else, not the performance — the gentlest way to travel from the Pays d'Aix.
