World cuisine, in Provence
Travel from one plate to the next without leaving the South: at Pakal, the flavours of the world meet the Provençal light, minutes from Aix-en-Provence.
Travelling the world without leaving Provence. That's the simple idea behind Pakal: a cuisine open to flavours from elsewhere, rooted in southern produce and served in Bouc-Bel-Air, a short drive from Aix-en-Provence. No postcard, no folklore — just honest plates that make you want to set off.
The idea
The world on the plate, Provence all around
At Pakal, world cuisine isn't a collection of clichés but a thread: we borrow a spice from Asia, a gesture from the Mediterranean, a generosity from South America, and we let them talk to the best of what Provence has to offer. The journey happens at the table, without a passport.
The result stays readable and honest: a recognisable product, a precise cooking, a seasoning that wakes up without masking. We look for the emotion of somewhere else, not the performance — the gentlest way to travel from the Pays d'Aix.

The through-line
One table, a thousand stopovers
Starters to share, generous fish and meats, comforting pasta and risotto: Pakal's menu roams the continents without ever losing the South. Each dish is a stopover — the sweet-and-savoury of Asia, the sunshine of the Mediterranean, the embers of the Americas — linked by the same love of produce and sharing, in the heart of Provence.
Three stopovers
Choose your horizon
Three families of flavour to compose your journey, from the first shared bite to the main course — all gathered under the same Provençal roof.
