The dish of the day

Every lunchtime, a market suggestion signed Pakal: travel cuisine paced by the day's deliveries, in Bouc-Bel-Air.

The dish of the day is the menu breathing in the present. In Bouc-Bel-Air, Pakal's kitchen builds a plate each lunchtime from the market and the chef's inspiration — generous, well-travelled, never twice the same.

The idea

A market suggestion

Morning-caught fish, seasonal vegetables, spices from elsewhere: the dish of the day is born from the best the kitchen finds at daybreak. It carries the spirit of our travel cuisine without ever copying the fixed menu.

We chalk it on the board and tell it at the table. Built for lunch, it moves at the right pace: a starter to pick at, a comforting plate, and the urge to come back for tomorrow's suggestion.

In the kitchen

The market sets the tone

Here, the dish of the day isn't decided in advance: the delivery writes it. A fine fish, a cut of beef, a vegetable at its seasonal peak, and the kitchen improvises around it, between brasserie technique and nods from elsewhere. A different plate every day, always in the house spirit.
